Two hundred years ago, malt whisky was carried through Scotland in small casks that were easily transported on the backs of packhorses. As transportation methods improved, Scottish distillers turned to more economical larger casks, which became today's uniform standard for maturation. Until now. Realizing that using the original small cask maturation process would be an innovative way to add new character.

Laphroaig Quarter Cask is handcrafted to deliver a new expression of Laphroaig's powerful, smoky flavors with smoother, creamier and more complex notes. Laphroaig Quarter Cask is initially matured in American Oak bourbon barrels, and then is transferred into new, specially produced Quarter Casks for a final seven- to eight- month period. As a result, the maturing spirit receives 30% more contact with wood than other single malts aged in larger, more commonly used barrels.

The additional wood influence imparts a very special character to the spirit. The result is a single malt with the unmistakable peat smoke that is so unique to Laphroaig, and a creamy, coconut-like nose with a soft sweetness, a hint of salt. Non-Chill Filtered 48% ABV

Laphroaig 25 year old has been lovingly created by marrying Laphroaig that has been matured in Oloroso Sherry casks with Laphroaig that has been matured in ex-American Bourbon Barrels; both were filled with newly distilled Laphroaig spirit from day one.

When you marry together the sherried, oaky flavours from the 2nd fill European Oak Oloroso Sherry Casks with the creamy, smooth, sweet flavours from the ex American Oak Bourbon barrels you end up with a marriage made in heaven that�s called Laphroaig 25 Years Old. Bottled at 40% ABV, it is a perfect fusion of these two most different styles of maturation flavours, made even smoother by the 25 years it has had gently maturing.

The aroma seems quite closed giving only a rich, sweet scent but a touch of water releases all the multitude of different flavours. The initial sweet, sherry sweetness is quickly followed by the time-honoured Islay peat tang. After this opening burst of flavour there is a smooth fruit ripeness that complements the tang of salt in the background.

The burst of peat that fills the mouth is quickly restrained by a sherry sweetness that slowly develops into spicy apple fruitiness. Finish is very long and warming leaving a distinct tang of Islay

The taste is soft yet with a firm bite and mouth filling with wood tones along with strong molasses, tropical fruit, melon and somewhat unripe honey.

The aftertaste is nice and long, fresh and slightly dry.

This Gran Anejo compares to premium labels and will surprise the rum hedonists and professionals.

Aged in Bourbon barrels, the color is a burnished bronze. The aroma offers hints of toasted caramel, chocolate and butterscotch. And, it delivers on that promise. The more it sits, you'll find hints of black cherry and praline. This is not a robust rum, rather, one that languidly moves forward like a well-played romance, as its finish lingers with several encore performances. Zafra is a well-structured and well-balanced rum with a healthy dose of sophistication.

This whiskey is produced at the scenic Buffalo Trace Distillery in Frankfort. This is not a single barrel but a small batch from the mixing of a very small group of barrels (part of the antique series). Cacha�a is a liquor made from fermented sugarcane. It is the most popular distilled alcoholic beverage in Brazil. It is also known as aguardente (aguardiente), pinga, caninha or other names. Cacha�a is mostly produced in Brazil, where 1.5 billion liters (396.4 million gallons) are consumed annually, compared with 15 million liters (3.964 million gallons) outside the country.

Cacha�a is, "...the product of the distillation of fermented sugarcane juice. Cacha�a differs from rum in that most rum is made from molasses. Use of molasses allows for the use of the byproduct of sugar production and a smaller still but has the taste affected by heating. Cachaca can be classified as a "rhum agricole" which is rum produced directly from cane juice.

Cachaca Coral is double distilled and it's temperature and distilling speed is controlled inside a copper alembic with a steel inox condenser. This guarantees a lower congener and a minimum level of ethyl carbonate, combining to help maintain the flavour and smoothness and reducing any "hang over" effects more common with other cachacas.

The Aged Cachaca Coral is stored for a minimum of 1 year in barrels made from "castanheira" and umburana", typical Brazilian wood. The aging process permits the necessary oxygenation which results in a delicious bouquet and smoothness with a national flavour.

Our unusual distillation process combined with our oddly delicious set of infusions yields a one-of-a-kind gin that is passionately loved by a tiny yet growing handful of individuals all over the world. No other gin tastes like it because no other gin is made like it.

There are four Carter-Head Stills in the world. Ours was built in 19th century London and has been restored to its original condition by our full-time coppersmiths. Instead of crudely boiling its ingredients, the Carter-Head "bathes" them in vapours. By keeping our eye on the round windows, we enforce the slowest possible build-up. This makes an enormous difference in flavour. The more leisurely the distillation, the smoother and more thorough the instillation. This is especially critical when dealing with the peculiar orchestra of botanicals that makes Hendrick's Gin so extraordinary.

Our delicious rogue�s gallery of botanicals are instilled during distillation. Then our two infusions are added. First is a lovely hint of Bulgarian Rose, which is extracted by gently pressing essential oils from the petals. Next comes the coup de grace � Cucumber, the essence of which is obtained by mashing the fresh fruit, then mixing the pulp with cold water. This initiates a slow infusion process that extracts the essential subtle flavours, which are then painstakingly infused into the spirit, one small batch at a time.

You may well have noted that the Hendrick's bottle is shaped like an old apothecary bottle. Why, you ask? Once upon a time, the apothecary, with his bottles of extractions, essences and botanical tonics, was relied upon to cure diseases and redeem healthfulness. The bottles he carried were intended to protect the delicate healing powers of the liquid held within. It made sense, therefore, that a spirit as intricately flavourful and delightfully odd as Hendrick�s be kept in the same such bottle.

Altero was created back in 1983 with the intention of making a more modern style of Brunello. Altero is a proprietary wine that is distinguished by being aged in 500-liter French oak tonneaux for a period of two years rather than for three years in the large new Slavonian oak barrels used for the traditional Brunello. Altero completes its aging requirement by spending two years in the bottle before release.

In 2000, sixteen years after the first release of Altero, the new regulations for Brunello confirmed the validity of this innovative alternative. In effect the formula for Altero anticipated the new trend for Brunello, and at Poggio Antico today it is possible to choose between a new and a classic style of Brunello.

Since its introduction Altero has received very favorable reviews and enjoyed great commercial success, so every year an increasing part of the crop is set aside for it.

Claude Chatelier Cognac is made exclusively from top-quality wines from vineyards in the best growing areas of Cognac. Traditional distillation techniques are used to produce the young Claude Chatelier, which then ages in cool, shady cellars before being blended into a superbly balanced cognac.

Claude Chatelier Cognac is distilled twice in small copper stills (maximum capacity of 2500 litres). The first distillation ensures that the unfiltered wine is heated gently to achieve a slow and controlled evaporation. The alcohol vapours rise into the onion-shaped head and then pass through to the copper condenser coil, which maintains contact with cold water to cool and condense the vapour. The liquid obtained at this stage, known as �brouillis,� is slightly cloudy and has an alcohol content of 28%.

The second distillation is then takes place, when the "brouillis� is distilled. Only the finest part, the center part (called heart) of this "bonne chauffe" (second distillation) is kept for aging, while the distillates from the beginning and the end of the process (called heads and tails) are discarded.

More than 24 hours of intensive work, care, and craftsmanship are necessary to create the final eau-de-vie.

The young Claude Chatelier Cognac is immediately transferred into new Limousin oak barrels, which have a capacity of not more than 350 litres. New Limousin oak naturally has a high level of tannin and a greater porosity that makes it ideal for ageing fine cognac. After approximately one year, older barrels with softer tannins will now welcome our eaux-de-vie. These barrels provide the perfect environment for our cognac to develop into a smooth, well-balanced, and rich eau-de-vie, without the excessive flavour of wood dominating.

The right levels of temperature and humidity are key factors when aging a fine cognac. In our cool and damp cellars, the bare dirt floors allow the presence of a high level of humidity in the air, resulting in a softer, rounder aged cognac. A perfectly balanced interaction between the cognac, the oak, and the air is key to obtaining a finely aged eau-de-vie.

In addition to the natural evaporation of alcohol from the barrel known as "La Part Des Anges" (the Angels' Share), the cellar master must harmoniously reduce the cognac over a period of one to three years by slowly adding distilled water. At the end of this process, the cognac will have reached its final alcoholic strength (40% alcohol by volume � 80 proof).

Blending is an art. Only a great cellar master can reach the perfection of a great blend such as Claude Chatelier Cognac. And blending is decided only when our cognacs reach their peak. Eaux-de-vie from different ages and different origins will be subtly married to achieve a perfect balance and aromatic richness.

The history of Pisco in the United States began during the gold rush in San Francisco where miners traveled north to see if they would hit the jackpot, and met up with the ships heading north from Peru carrying with them the great Pisco spirits.

Many Pisco Houses began to pop up in San Francisco in the early 1900's, ending unfortunately with the passing of prohibition as a constitutional amendment. Once prohibition was repealed, much of the history of Pisco in the US was lost, and has just recently been recovered as many premium Pisco producers are re-introducing this great spirit to the American consumer.

Chacayes, our iconic wine, bears the indigenous name given to the small jackal that inhabits the plateaus of the Andes where the vineyard can be found, an at altitude of over 1100 meters. As of the very first vines planted, Francois instantly detected the huge ptential of this terrior: poor soil made up of volcanic sand and pebbles, a cooler climate than in the plains and pure water from the melting snow to irrigate the vines.

80% Malbec, 20% Cabernet Sauvignon, from Lurton�s �Chacayes� high density vineyard. Double berry sorting, five weeks cuvaison, 21 months in new French oak barriques. 2003 is the second release.

Blackish purple red, almost impenetrable. Very ripe black fruit aromas, with plenty of new oak spiciness. Very intense bouquet, rich with a sweetness of expression. One of the few rums (French spelling 'rhum') in the world to claim a terroir, as the sugar cane is grown in a unique microclimate in volcanic soil on a single estate - a small circumscribed geographic area (and granted an AOC because of it) making it unique. This is much like the great houses of Bordeaux, Cognac or Champagne. Produced and bottled on the estate.

Another noteworthy point is that it is a Rhum Agricole or made directly from sugar cane juice rather than molasses. Less than 5% of the worlds production of rum is made this way and the process yields a dramatically different product.

In the latter half of the nineteenth century, Martinque was the source of the highest quality of sugar for Europe and the the epicenter for all Caribbean sugar commerce. By 1883 a great sugar crisis overtook the island because European countries used less expensive sugar from South and Central America. In 1887 Homere Clement, the mayor of La Francois, purchased the pretigious sugar plantation in his village, Domaine de l'Acajou, out of bankruptcy. His intentions were simply to stop the rioting planters and have them return to the fields to harvest sugarcane again, not for sugar, but to be pressed for their natural juices to distill rum. Homere Clement is now coined as the "Father of the Rum Agricole".

In the year 1875 one of the most famous absinthe distilleries of Switzerland was founded in the Val de Travers. The great grandson of the founder Yves K�bler revived his family legacy when he purchased the premisies and founded the �Distillerie Blackmint.� Using an old family recipe, K�bler first created an aniseed aperitif called �La Rincette�. At that time the drink was without the thujone bearing wormood, as real absinthe was still illegal in those days. Kuebler Absinthe was the very first absinthe to be produced after the Swiss lifted the ban on absinthe in 2005.

A more tradtional absinthe than Lucid on account of the authentic anise kick and with a real pedigree, this absinthe is white in colour, as is the case with all Swiss Clandestine absinthes, and delivers a spectacular louche - perhaps on account of its strong herbal complexity with a strong note of star anise.

The reason that Swiss abinsthe is white is due to its true underground clandestine roots - it was a means of outwitting the early 20th century absinthe ban! That all changed in 2005 but the tradition lives on.

Punch Abruzzo was first produced in Borrello, a small cold mountain village, where Mayor Antonio Evangelista used to prepare himself a special drink to defend himself against the rigors of winter. He heated his liqueur at the fireplace, diffusing such a heady and intense aroma that it excited the curiosity of his neighbors.

Because of insistent and growing request, the mayor started preparing the liqueur for close friends. By 1907, Punch Abruzzo was famous and awarded several prizes and medals.

The secret formula, a masterly fusion of natural ingredients, was handed down to the mayor's sons, and today the third generation of Evangelista's still produce Punch Abruzzo in the old ways.

Once appreciated as a hot drink for its rich bouquet (try 10-12 seconds in the microwave) it is also enjoyed cold with ice, in long drinks and cocktails, on ice cream, cakes, and tarts. As a digestive, it is the pleasant conclusion to a meal.

Once a year, in mid-June, in the storied region of Cognac, France, the rare green grape flower blossoms to life. The flower exists for only a short time before maturing into grape berries and, in this succulent state, is the exquisite infusion for G�Vine Gin.

The base for the G�Vine infusion process is unique to the Gin family. France�s Cognac region is home to the centuries-old Ugni Blanc grape. In September of each year, the Ugni Blanc are harvested and immediately pressed and converted to wine. The resulting spirit is distilled four times producing a neutral grape spirit. Unlike the traditional grain spirit associated with Gin production, the Ugni Blanc grape spirit is much smoother and more suave with a heady body and aroma new to the palate. Corzo's unique distillation process is, at the very least, exceptionally complicated. It starts with blue agave from a region known as Los Altos located a mile above sea level. This area is blessed with a more moderate climate than most of Jalisco as well as a rich red soil, allowing for a sweeter agave fruit. Unlike many other tequilas, Corzo uses only the nectar extracted after five hours of roasting, well after sour elements from the skin are fully eliminated. Corzo then uses a unique strain of yeast and goes so far as to play soothing classical music through the fermentation process. After the spirit is complete, it undergoes a unique process that introduces microscopic air bubbles to allow it to breathe before bottling.

Corzo Reposado is the perfect blend of the purest and most refined Agave available. A Tequila of extraordinary character with full aroma and flavor of blue agave.

Corzo's unique distillation process is, at the very least, exceptionally complicated. It starts with blue agave from a region known as Los Altos located a mile above sea level. This area is blessed with a more moderate climate than most of Jalisco as well as a rich red soil, allowing for a sweeter agave fruit. Unlike many other tequilas, Corzo uses only the nectar extracted after five hours of roasting, well after sour elements from the skin are fully eliminated. Corzo then uses a unique strain of yeast and goes so far as to play soothing classical music through the fermentation process. Following aging in small white oak barrels, Corzo Reposado undergoes a third and final distillation, eliminating any remaining impurities. This step vastly improves the spirit, but means that each bottle of Corzo takes almost twice as much agave to produce as any other super-premium tequila. After the spirit is complete, it undergoes a unique process that introduces microscopic air bubbles to allow it to breathe before bottling.

One of the few rums (French spelling 'rhum') in the world to claim a terroir as the sugar cane is grown in a unique microclimate in volcanic soil on a single estate - a small circumscribed geographic area (and granted an AOC because of it) making it unique. This is much like the great houses of Bordeaux, Cognac or Champagne. Produced and bottled on the estate.

Another noteworthy point is that it is a Rhum Agricole or made directly from sugar cane juice rather than molasses. Less than 5% of the worlds production of rum is made this way and the process yields a dramatically different product.

In the latter half of the nineteenth century, Martinque was the source of the highest quality of sugar for Europe and the the epicenter for all Caribbean sugar commerce. By 1883 a great sugar crisis overtook the island because European countries used less expensive sugar from South and Central America. In 1887 Homere Clement, the mayor of La Francois, purchased the pretigious sugar plantation in his village, Domaine de l'Acajou, out of bankruptcy. His intentions were simply to stop the rioting planters and have them return to the fields to harvest sugarcane again, not for sugar, but to be pressed for their natural juices to distill rum. Homere Clement is now coined as the "Father of the Rum Agricole".

The bouquet is wonderfully nutty and buttery with scents of black pepper and potent spirit. The palate entry is delicate, compellingly oily and spicy; the midpalate showcases the oak and the sugarcane in perfect balance. Finishes refined, world-class and slightly honeyed.

Rhum Cl�ment X.O. 88 proof, is a blend of rare and aged rums 25 year rums and older (1976, 1970, 1952). This stellar rum proves the appeal of aged sipping rums, hand selected, carefully blended to bring out the best points of each vintage year in one bottle.

Rubbed bronze/dark baltic amber gold/brown, in color like a very expensive armagnac. Well-balanced nose with fruit, wood, spices and a hint of nutmeg, delicious taffy flavors. A smooth rum that is inviting, complex and rich with excellent length.

Best enjoyed on its own as a sipping rum, it's an excellent example of an older Rhum Agricole and really showcases the difference between a sugarcane juice rum and a molasses rum. This makes a spectacular gift for a rum-lover, but get two - you are going to want one for yourself.
